Mandarin Orange Salad
From the kitchen of Ann Lindsey

Lettuce (iceberg or romaine) about half a large head of iceberg or whole if small 
1/4-1/3  C. chopped celery 
5 green onions sliced thin including tops  (use 1/4 C regular onions if green are not available) 
1 regular size package slivered almonds 
1 can Mandarin oranges 

Mix first three ingredients 
Optional: brown almonds in 2T sugar slowly over low heat until 
coated.  Let cool. 
     (can skip sugar & browning if wanted) 

Dressing 
2 tablespoons cider vinegar 
2 tablespoons sugar or equivalent in Nutri-sweet 
2 tablespoons chopped parsley 
dash pepper 
2 dashes tabasco 
1/4 C olive oil 
Personally, I prefer to mix double portion of dressing. 

Toss greens, nuts, oranges and dressing just before serving. Looks elegant and can be make from stock ingredients.
