  Sesame Noodles
From the kitchen of Claudia Beach
1/2 pound thin spaghetti 
6 ounces fresh snow peas 
4 scallions 
1/2 cup roasted unsalted peanuts 
small bunch parsley (if you have it) 
3/4 inch fresh ginger (chop very fine) 
2 fresh hot green chili peppers with seeds and white removed 
2 cloves garlic, chopped very fine 
2 teaspoons sugar 
salt & pepper 
1/4 cup rice wine vinegar 
1/2 cup soy sauce 
1/4 cup peanut or olive oil 
2 tablespoons sesame oil 

First cook snow peas 2 or 3 minutes and put in cold water, drain then cut into slices. Roast peanuts and set aside. Chop the green chili peppers very fine then mix all (except pasta and peanuts) together. Mix in spaghetti. Chill for 3 to 4 hours before serving. Just before serving add peanuts. 

The recipe called for cooked shrimp, but I didn't think it would add anything. 

Note from Barb:  Claudia served this dish to us and it was simply delicious. We loved it.
