Buttermilk
Salad

No one will believe what is in this. Great for pot luck dinners
or seasonal meals. Color can be changed according to which flavor
jello you use. Read on!
2 cups buttermilk **
1 large box of Jello (can use sugar free)
1 large can crushed pineapple
1-8 ounce package of dairy topping, thawed (such as cool whip)**
Pour pineapple with the juice in saucepan, add jello.
Heat,
stirring constantly until jello crystals leave spoon. Do not
boil. After jello disolves, remove from heat and cool slightly.
Add 2 cups buttermilk; stir. Fold in 8 ounce package of thawed
cool whip. Fold until well mixed and color is even.Place in 8 X 2
dish and refrigerate. Serves 16.
** May use fat free buttermilk and dairy topping
Good as accompanying salad or as desert. I use Strawberry Jello for
Valentines, Christmas or whenever reddish or pink color wanted and use
orange or lime for spring or when orange or green color desired.
Option: If space is limited-cut
recipe in half by using a small box of jello, 1 cup buttermilk, small can
pineapple and 1/2 of an 8 ounce cool whip container.
