Curried
Chicken & Zucchini Salad

2/3 cup mayonnaise
1 cup nonfat plain yogurt
3 tablespoons red wine vinegar
1/2 teaspoon curry powder
1/2 teaspoon salt
1/4 cup grated onion
5 cups shredded cooked chicken
5 small zucchini, cut into matchbook size strips
2 small apples
leaf lettuce
1 cup toasted almonds
Combine yogurt, mayonnaise, vinegar, onion, curry powder, and salt
in a large bowl. Stir till smooth. Add chicken and zucchini; toss to coat.
Arrange lettuce on dish. Top with chicken mixture; sprinkle with almonds.
Top with apple slices. |
