Pumpkin
Roll

1 cup sugar
2/3 cup pumpkin
3/4 cup flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
Grease jelly roll pan, then line with waxed paper. Grease the waxed
paper. Mix ingredients and pour in pan. Bake at 350 degrees for 10-12 minutes.
Sprinkle dish towel generously with powdered sugar. Dump jelly roll
onto towel, peel off waxed paper and roll up with the towel in it. Let
cool.
Filling
8 ounces cream cheese
2 tablespoons margarine
1 cup powdered sugar
dash of vanilla
Beat until smooth. After cake has cooled unroll, spread filling and
roll back up. Sprinkle with powdered sugar.
