 Spicy Walnuts
 from the kitchen of Barb Hofmeister

2-1/2 cup walnut halves 
1 cup granulated sugar 
1/2 cup water 
1 teaspoon cinnamon 
1/2 teaspoon salt 
1-1/2 teaspoon vanilla 

Spread walnuts on a baking sheet and warm for 5 minutes in a 375 degree oven. Butter sides of a heavy 2 quart sauce pan. In it combine sugar, water, cinnamon and salt. Cook & stir till sugar dissolves and mixture boils. Continue cooking without stirring to a soft ball stage (236 degrees). Remove from heat. Beat by hand 1 minute until it starts to get creamy. Add vanilla and warm nuts. Stir until nuts are coated and mix is creamy. Turn out on a buttered platter or cookie sheet. Separate at once, using two forks. 

These are easy to make and I usually double the batch. I always make this at Christmas time to give to my campground neighbors. A small amount in a little snack bag or inexpensive little dish topped with a  festive bow looks pretty and is always welcome.
