 Simple Cajun Chicken & Pasta

2  Chicken breast halves, skinned and boned. 
6  ounceFettucini or other pasta 
1  14 ounce can cajun stewed tomatoes 
   cajun seasoning 

Cook pasta until almost done according to directions on package, rinse and drain. Meanwhile, cut chicken into bite sized pieces, sprinkle with seasoning and brown in a non-stick frying pan. Assemble pasta, chicken and stewed tomatoes in a casserole dish (or pan you cooked pasta in) and heat to serving temperature. Serve with grated parmesan cheese. 

Note: I usually use a 12 ounce package of pasta and add second can of stewed tomatoes. It makes a dish with less meat per serving and it is good leftover on travel days.
