Chicken

3 to 4 pounds chicken breasts
(skinless/boneless)
1/4 teaspoon salt
1-10 ounce jar peach preserves
1/2 cup barbecue sauce
1/2 cup chopped onion
2 tablespoon light soy sauce
1-6 ounce can water chestnuts (sliced/ drained)
1 green pepper, julienne sliced
dash pepper
Place chicken pieces in a baking dish and sprinkle with salt and pepper.
Combine preserves, BBQ sauce, onion and soy sauce and pour over chicken.
Cover and bake in 325 F oven approximately 1-1/2 hours.
Add water chestnuts and green pepper for the final 10 minutes.
Delicious, healthy (low in fat) and so easy to make. Great for
entertaining. Prepare ahead of time and pop in the oven whenever.
Visit with your guests while this gourmet entre is cooking.
