Tarragon-Dijon
Chicken

6 chicken breast halves, skinned, rinsed and patted dry
Non stick cooking spray
2/3 cup unsweetened pineapple juice
1/2 cup white wine worcestershire sauce
1 tablespoon country style dijon mustard
1/2 teaspoon crushed dried tarragon
Spray 9 X 13 baking dish with no stick cooking spray. Place chicken
breasts — flesh side down in baking dish. Combine remaining ingredients
and pour over chicken. Cover snugly with aluminum foil — sealing
edges. Bake 1 hour 10 minutes at 350.
During the final 10 minutes, remove foil and turn chicken flesh side
up. Remove chicken breasts to serving platter. Strain the juice
and spoon over each piece. Makes 6 servings.
This is very good served with white rice and a fresh vegetable.
