 Two Bean Enchiladas
 a "no-fat" recipe
 From the kitchen of Jo Ann Wade

Spray saucepan with Pam. Combine the following in a sauce pan; cook 3-5 minutes:
1 cup diced onion
1 cup diced green bell pepper
1 teaspoon minced garlic
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 cup vegetable broth
Add:
1-15 ounce can black beans
1-15 ounce can kidney beans
1-15 ounce can tomato sauce 
Bring to boil and simmer 10 minutes

Add:
1 cup corn (canned or frozen)
Cook two minutes

Use low or no-fat flour* tortillas. Heat according to pkg directions. Use a slotted spoon to fill each tortilla, roll and place in 9 X 13 baking dish that has been sprayed with Pam. Drizzle leftover liquid over top before baking.
Bake at 450 15 minutes.

*If using corn tortillas you may need to cover the dish to keep them softer.
