Brandied Sweet Potatoes
from the kitchen of Patrick Johnston

12  Medium Sweet Potatoes 
1-1/4 cup brown sugar 
3/4 cup water 
6  tablespoons butter 
3/4 cup chopped apples or raisins (Patrick uses both) 
1/2 cup brandy or cognac 

Preheat oven to 350 degrees 

Wash potatoes, do not peel.  Cook until soft.  Drain- cool, and peel. 

Slice into a greased casserole. 

Bring to a boil the brown sugar, water, butter and fruit.  And brandy.  Pour over the sliced potatoes. Bake, uncovered, 30-35 minutes, basting several times with syrup in 
casserole.
